Pasqua Villa Borghetti Valpolicella DOC Superiore Ripasso
PRODUCER: A dive into traditional Veneto enology, with the best vines from Villa Borghetti in the heart of classic Valpolicella for the red wines, and from the most famous areas near Verona for the white wines.
WINEMAKING: After pressing and de-stemming, fermentation is set off at controlled temperature of 25°-26° C with pumping over the skins every 8 hours to extract polyphenols and anthocyanins. Placed in steel tanks until February, the product is then left on the skins of the Amarone where it ferments again, enhancing the structure and aromas of the wine. After running off and decanting the wine is transferred to barriques of various capacity and toasting, where it stays for some months before assembling and bottling.
TASTING NOTES: Ruby-red, this wine offers intense aromas of morello cherries, but also of blueberries and redcurrants, which give way to notes of liquorice and spicy hints. A rich and full-bodied wine, with sweet and round tannins.
