PRODUCER: Philip Shaw Wines are made only from the grapes grown on Koomooloo, a 47ha vineyard, most of which was planted in 1988/89. Philip has been making wine in Australia for more than four decades and he approaches each aspect of wine making with a healthy mix of innovation and unrelenting quality standards.
WINEMAKING: The Parcels were picked in the cool of the morning and delivered to the winery for processing. Approximately 15% of selected parcels were kept as whole bunches for ferment and the remainder of the grapes were destemmed, sorted and split before being placed into closed fermenters. Wild yeast carried out the primary ferment, giving the wine greater complexity and mouthfeel. During ferment the wine was monitored and tasted daily. Extended maceration on selected parcels gave greater depth and savoury characteristics. The wine was pressed, and racked to oak where it was left to mature and evolve.
TASTING NOTES: The Wire Walker is light garnet in colour. The nose is perfumed exhibiting ripe red cherry, strawberry and a touch of mocha. There is an element of spice and savouriness on the palate with good fruit weight and depth of flavour. An elegant wine with bright succulent fruit.
