Paxton Jones Block SV Shiraz McLaren Vale
PRODUCER: Established in 1979, Paxton is a family owned wine company. Founder and owner, David Paxton is one of Australia’s most highly respected viticulturalists – a reputation built on managing and growing wine grapes of exceptional quality for over 30 years. In 2011 Paxton became a fully certified organic and biodynamic wine producer.
WINEMAKING: Hand picked at optimum sugar and flavor equilibrium, the grapes were kept on skins for 15 days. The ferment was pumped over and plunged twice a day to extract colour, flavor and tannin structure. Once pressed, they used a combination of French and American oak barriques (30% new) for maturation of up to 20 months prior to blending and bottling. This wine was cellared for a further 12 months prior to release.
TASTING NOTE: Deep red robe, with a purple intensity. Intense fruit with blackberry, cinnamon and chocolate characters and skilfully layered oak notes. Full bodied and full of flavor, dense dark fruit drive and blackberry characters. A powerful yet sleek wine that packs a flavor punch.
