PRODUCER: Paolo Leo, the owner of a historic winery named after him, started his business in the heart of Salento in Apulia, which is considered southern Italy. Today the winery has become a modern company with a completely computerized bottling line that is able to bottle 6,000 bottles per hour. WINEMAKING: The harvest is at dawn. Stemming and soft pressing of the grapes. Fermentation at a controlled temperature of 25 ° C. Aged for 12 months in French oak barrels, 6 months in large oak barrels, 4 months in stainless steel tanks and 4 months in bottle.
TASTING NOTES: In color, the wine has an intense ruby red with garnet reflections; elegant bouquet, intense aromas of jam perfectly balanced with spice and wood undertones; full-bodied, harmonious with delicate tannins. Excellent with pasta dishes, roast meats and mature cheese.
