PRODUCER: Geoff Merrill Wines has vineyards in two of Australia’s classic viticultural regions: “Pimpala Vineyard” and “Wickham Downs” in McLaren Vale, and “Graymoor” in the Coonawarra. Individual growing conditions at each site provide an exciting opportunity to highlight the very best of what each region has to offer by skilfully blending single varietals such as McLaren Vale Shiraz and Coonawarra Cabernet for a superb result.
WINEMAKING: Approximately 14 months after vintage, barrels from the Coonawarra and McLaren Vale vineyards are blind tasted and the finest make the grade for the Reserve Cabernet Sauvignon. These barrels are blended together in tank then returned to a variety of new (85%) and seasoned American and French oak hogsheads for 32 months of additional maturation prior to bottling.
TASTING NOTES: The colour is a dark red with just a hint of brick red development beginning to show. The aroma offers the best of the variety and both regions. Menthol, mint, chocolate, cedar, hints of vanilla and wonderful earthy, leathery notes as well. The palate is beautifully balanced, full of flavour and lingers in the mouth almost indefinitely. The excellent acid and tannin structure, coupled with the fruit concentration and complex nature of the wine ensures great cellaring and food matching potential.
