PRODUCER: Tracing its roots back to 1830 and still a family run bodega, El Maestreo Sierra prides itself on it's use of the traditional methods of hand siphoning, gravity settling and the use of incredibly old barrels to produce it's unique sherries. Some of their practices (and the resulting wines) sit outside the normal rules for sherry, but the Consejo Regulador recognises the unique nature of the wines and grants them exceptions.
WINEMAKING: The wine spends four years in a solera system of 500-litre American oak butts before being transferred to bottles. This Fino spends longer time in contact with the flor than normal, and is bottled unfiltered, only undergoing some gentle cold stabilization.
TASTING NOTES: Very aromatic with intense savoury notes of yeast, lemon peel, fresh grass, green olives and hints of almonds. It is bone-dry on the palate, very fresh and tasty with a lingering salty finish.
