What it tastes like

A lemon-yellow in colour with green fruit aromas of melon, green apple and pear with a hint of butter from the oak. Medium-bodied on the palate with further floral notes and an elegant mineral backbone. The finish is lingering with notes of lime.

The grape

Chardonnay

Best known in Burgundy, Champagne, California

The world's most versatile white grape. Crisp, mineral and citrusy in cool places like Chablis; rich, creamy and toasty when oak-aged in warmer spots. It is also a key grape in Champagne.

Where it's from

Burgundy

France

The spiritual home of Chardonnay and Pinot Noir. Burgundy's genius is its obsession with place — every vineyard classified, every nuance of soil and slope mapped and celebrated. Wines of extraordinary elegance, often infuriating scarcity, and occasionally life-changing quality.

The story behind it

Domaine Thibert Père et Fils is a family-owned domaine located in the small village of Fuissé in the heart of the Mâconnais. There have been winegrowers in the family for seven generations, but it wasn't until 1967 when, with only two and a half hectares of vines, the parents of Christophe and Sandrine set up their own business. Since then the domaine has gone from selling the whole production in bulk to bottling everything themselves. It has gone from just a few hectares to 22 hectares of vines. And in 2007 they slowly began moving towards organic winegrowing. Their goal is always to combine the best of traditional and modern practices. Their plots are worked in a system of “mixed” viticulture. Drawing on our years of experience and the knowledge they have acquired, they always respect their vineyards and soils, while adapting their practices to climatic conditions.     Low yields, judicious use of new oak and minimum filtration are what make the wines what they are. Vinification and ageing is traditional in foudres (70%), the rest in futs de chene. The wine remains on the lees before bottling. After 12 months of ageing the wines are bottled with minimum filtration.
