PRODUCER: Sylvie Dufaitre-Genin, owner-vinegrower-winemaker, crafts Brouilly and Côte de Brouilly in Odenas, just to the south of Mont Brouilly.
Her profession is her passion, and she tends 11.6 hectares (28 acres) of Gamay Noir à Jus Blanc vines with respect and understanding.
WINEMAKING: Reds are produced using the Gamay grape, which has a great ability to capture the character of the schist and granitic soils of the region.
However, the real secret behind the fresh grape fruitiness of the region's wines lies in the way the grapes are fermented – a technique called carbonic maceration whereby the berries are covered with a layer of carbon dioxide. This yields a complex yet elegant palate, silky tannins and a peppery finish.
TASTING NOTES: This particular example from Yvonne is light purple in colour with tinges of violet. On the nose expect scents of black cherries, strawberries and apricots. On the palate, a clean mineral texture with restrained tannins and further cherry flavours leading to a spicy finish.
