Tim Wildman Astro Bunny Pet Nat

PRODUCER: There are very few winemakers who would readily admit that in the early days they were literally making it up as they went along. But that’s very much the approach that self-taught winemaker, Tim Wildman MW, took when he first had a go making pet nat wines in Australia. Now on the verge of his fifth vintage he is really beginning to make a name for himself Down Under and can claim to be the biggest importer of pet nat wines into the UK.
WINEMAKING: The grapes were handpicked over two days. The grapes were immediately transferred to a newly designed chill room built on the vineyard. They were delivered (extra-cold) to the winery in the Adelaide Hills the following morning. The Nero d’Avola and Vermentino were destemmed and pressed immediately upon arrival while the Zibibbo was lightly crushed and given 24 hours of skin contact prior to being pressed. The pink juice was transferred to a tank and the temperature dropped down to encourage settling of gross lees prior to the alcoholic ferment beginning. Doing this prior to ferment really provides a cleaner fermentation, thus resulting in more pristine and fruitier flavours.
TASTING NOTES: Hugely peachy and a little grapey with a dash of lychee like of the nose. There's some floral characters, a hint of lemon sorbet and some white strawberry notes too. It goes down dangerously easy. There's just enough fizz, just enough tactile grip, and refreshing acid to keep it on track. Feels almost like drinking fizzy fruit juice which is no bad thing.
