PRODUCER: When Ben from Indigo Wine visited the northern Peloponnese on holiday he was immediately taken by the wild mountain vineyards and the bright mineral wines. He asked Panagiotis Papagiannopoulos to make two own label wines for the Indigo Selection. Panagiotis works with native varietals, from high altitude sites cooled by the sea breezes from the Gulf of Corinth. Antiphon is made from Mavrodaphne, Agiorgitiko, Mavro Kalavrytino in a low-intervention style which allows the pure, juicy red fruit to shine through.
WINEMAKING: Grapes are handpicked in late September. They are gently crushed and only the free run must is used. It undergoes a long slow alcoholic fermentation, of around 5 months, with wild yeasts in stainless steel. The wine undergoes spontaneous malolactic fermentation and is left on fine wine lees for over 6 months. The wine is bottled unfined and unfiltered, with a touch of sulphur.
TASTING NOTE: Aromas of lemon blossom, citrus, apple and bergamot. Creamy mouth texture with refreshing acidity, hints of minerality and long finish. Works beautifully with fish, seafood, poultry and white salty cheeses.
