PRODUCER: MAI DIRE MAI (NEVER SAY NEVER) arises from the encounter between the secular experience of the Pasqua family and the exceptional terroir of the Montevegro vineyard: the 23 hectares of vineyards are located on the top of a hill at 350 meters above sea level between the Val d'Illasi and the Val di Mezzane, whose soil of basaltic and calcareous origin guarantees optimal minerality. An iconic line characterized by elegance, complexity and uniqueness in taste.
WINEMAKING: The grapes are harvested by hand and carefully selected, then they are left to dry in boxes for 4 months to obtain a higher sugar concentration. After pressing, a cold pre-fermentation maceration is carried out, while the malolactic fermentation takes place in steel at a controlled temperature of 22-25 C for 40 days. Aging in French oak barrels (70% 225 liter barriques and 30% in 500 liter tonneaux, only new wood) lasts 24 months.
TASTING NOTES: A wine of great concentration, structure, elegance and power. Still young but with a great personality. The nose reveals intense aromas of undergrowth, morello cherry, cedar wood, cocoa and hints of leather. On the palate it is warm and rich, enveloping and complex, with notes of ripe black fruit, cloves, dark chocolate and mocha. A wine of considerable complexity and freshness thanks also to the important acidity. The tannins are firm but elegant with a fascinating and persistent finish.
