PRODUCER: Both of William and Rachel Hoare have been lucky to have been mentored by some really clever and special people. They feel like they have been passed from gentle hand to gentle hand as they have worked their way from study to vintage worker to winegrower. While Novum encompasses all that they have learned in the past it is really about what they can deliver going forward. Their desire is to find opportunities that you wouldn’t otherwise have access too; to find small pockets of really good grapes (of any variety), then make many and varied wines that you would feel confident about sharing with friends. They want to keep you informed as they push boundaries with new ideas that will in time shape the future of Novum.
WINEMAKING: Fruit is handpicked and whole bunch are pressed and left to settle overnight. The juice and light lees racked to French barriques with a small addition of lees stored from last year’s vintage just prior to the wild primary fermentation. The wine then spends an additional 11 months in barrel (10% new oak), where it goes through a wild malolactic fermentation, with the lees stirred on the full moon. The wine is bottled unfiltered and unfined.
TASTING NOTE: Flinty with citrus and white stone fruit on the nose. Textural on the palate with very fine acidity, showing fleshy yellow fruits, oatmeal and river stone characters. The finish is long and complex.
