PRODUCER: The Domaine du Colombier has been a family property since 1887, handed down over several generations. In 1957 Mr Guy Mothe started to specialise in vinifying Chablis. Today his three sons, Jean-Louis, Thierry and Vincent work the 55 hectares of vines.
WINEMAKING: All grapes are hand-picked. Traditional with thermoregulation to 19° over 15 days in inox tanks, then aged for a further 12 months, 80% in inert and 20% in oak.
TASTING NOTE: This wine is from one of the seven Grand Cru vineyards, it has spent a short time in wood but the weight of the fruit still dominates. Fragrant, delicate and complex, the long taste is both substantial and succulent.
