PRODUCER: Owned by the Rossi family, the property extends over 100 hectares of woodland nature reserve where vines and olive trees are cultivated to organic farming protocols. The heart of the winery is a nineteenth-century farming settlement and what was once a monastery belonging to the Vallombrosan brothers from nearby Badia a Passignano. In 1997, Michela and Vittorio embarked on an extensive renewal programme of wine operations, from gradual replanting of the fifteen hectares under vine to rationalisation of the cellars and the introduction of meticulously selected mid-sized oak containers to conserve the original features of the Sangiovese and other traditional nature varieties grown on the estate.
WINEMAKING: Obtained from a blend of 50 % of Sangiovese and 50 % of Cabernet Sauvignon. The grapes are grown in their vineyards, located in the most suitable production areas of the Chianti Classico: Gaiole in Chianti and Quercegrossa. After a thorough green harvest the grapes are harvested in small boxes , cooled overnight and then worked on the double sorting table. Fermentation takes place in open barrels and barriques with the technique of winemaking in full. After a long maceration on the skins the wine is poured directly into the barrels of the best selection of fine grain French oak, where the malolactic fermentation takes place. It rises in barriques “sur lies” for 18 months. After bottling, aged in glass at least 6 months before being placed on the market
TASTING NOTE: Wine of extraordinary identity, very intense, elegant, refined, rich and complex with fruity notes of red and blacks berries and married in fresh spices undergrowth; sweet tannins, dense, thick, voluminous, long and balanced with a fresh acidity that extension fruity and spicy notes long and intense The terroir is the master of this wine, its expression is the comparison “face to face “ of two great grapes, Sangiovese and Cabernet Sauvignon, that have found their great varietal expression in Tuscany.
