PRODUCER: When Ksenija and John House founded the Ovum Wines in 2011, their main objective was to produce the highest quality of authentic Oregon white wines that reflected the true character of the grapes and the places where they were cultivated. Today, seven years later, Ovum is one of the well-reputed white wine producers in the world.
WINEMAKING: Manual harvested, destemmed, crushed. Soaked on skins for 5 hours, which increased the pH, giving the impression of more sweetness. Ambient fermented with indigenous yeast, 6 months less contact. Cross flow filtration. No fining.
TASTING NOTE: This erupts from the glass with a mélange of citrus – bergamot, flamed lemon, sweet grapefruit. Salty white tea aromas are interlaced with pithy lemon before a waft of alyssum hits your senses. Classic Big Salt on the palate – racy acidity combined with beeswax-y textures before finishing dry. Big Salt pairs well with fish tacos, pesto chicken pasta, pad thai…or just chilling.
