PRODUCER: Nautilus are a small, family-owned winery based in the stunningly beautiful Marlborough region of New Zealand. We began making Nautilus wines in 1985 and aim to craft delicious, food-friendly wines from the clean, cool and diverse valleys of Marlborough. Their energetic and innovative viticultural and winemaking team takes the approach of blending several different fruit parcels to achieve layers of complexity in the wines, focusing on their texture and mouth-feel. Our state-of-the-art but small-scale winemaking facilities give them the tools to achieve this.
WINEMAKING: The fruit was machine harvested at night or in the cool of the morning, gently crushed and pressed then fermented with a variety of aromatic yeast strains in stainless steel tanks - the sole aim being to reflect and preserve the flavours and aromas grown in the vineyard. 5% of the juice was fermented with a nonsaccharomyces yeast. After fermentation, the wine was kept in contact with the lees for three months. This classic technique enhances creaminess and integrates flavours.
TASTING NOTES: The Nautilus Sauvignon Blanc displays intense lifted aromas of passionfruit and citrus peel and hints of honeydew melon. The palate introduces a delightful citrus based mouth-watering intensity and finishes with a strong textural component.
