Yealands Land Made Pinot Noir
PRODUCER: On 08.08.08, when Peter Yealands shared his vision to become the world’s most sustainable wine producer, he already knew that the only way to craft truly beautiful, award-winning wines was in partnership with nature, and that compromising his deeply-rooted sustainability values was simply not an option. Today his philosophy holds true and forms the basis of Yealands estate approach to winemaking.
WINEMAKING: The low yielding Pinot Noir blocks were harvested at optimum ripeness. The parcels were cold macerated at 6 – 8 degrees for around five days before being warmed and inoculated with selected yeasts. A fast, hot fermentation proceeded with regular plunging to craft a wine with elegance and balance. The parcels were gently pressed off after fermentation, with a short period of post ferment maceration to achieve the desired tannin balance. The wine was aged with French oak while undergoing malolactic fermentation. The wine was then stabilized, blended and filtered prior to bottling.
TASTING NOTES: Offers ripe plum aromas with a touch of spice. The juicy ripe red fruit flavours lead into a supple, soft tannin finish. Beautifully matched with lamb dishes.
