PRODUCER: Duncan Savage is a very talented winemaker who's reputation was made at Cape Point where he has been making very serious wines for years. 'Savage' is his own venture where he discovers fascinating plots of great fruit and makes blends, each year slightly different, depending what he finds and cannot resist.
WINEMAKING: Since 2017, this flagship wine has been made exclusively from 100% pure Syrah and from 2018, 100% pure Stellenbosch Syrah. Produced from fruit grown on the decomposed granite soils of Southern Stellenbosch, these organically farmed grapes spent three weeks on their skins with 50% whole bunches employed in fermentation. After secondary malolactic fermentation, the wine spent 13 months in 500 litre French oak barrels and then a further 9 months in 3,200 litre conical foudres.
TASTING NOTE: “On the nose the aromatics are marked by intense notes of earthy red and blackberry fruits, inky saline notes of black cherries, pink musk, savoury cured meat nuances, black olives and a sappy cedar wood spice complexity. With 70% of whole clusters used in the fermentation, the palate shows pronounced chalky mineral tannins with vibrantly fresh crunchy acids from the granitic soils. Raspberries and blueberries surge to the fore on this dense, powerfully structured wine, gaining in richness and intensity as the wine slowly unfurls in the glass. The wine shows a focused prowess and concentration together with an opulent richness framed by an underlying stony minerality.
