Hilton The Dalmation Syrah 2017

PRODUCER: Richard Hilton Vineyards began in 2003 with its first vintage of Syrah made from 2 tons of grapes sourced from a grower on the west coast of South Africa. A mindful decision was made to focus on the varietal of Syrah due to the prevailing Cape Atlantic (often referred to Mediterranean) climate and high composition of decomposed granite. In 2007 a second wine was added to the ‘stable’ in the form of Viognier, a grape varietal that was only first planted in the Western Cape of South Africa in the 1989. This was a natural progression in the specialization of these two Rhone varietals which so perfectly suit the Cape’s soils and climate.
WINE MAKING: 100% de-stemmed and crushed with an addition of sulphur at 40 parts per million. Left to cold soak for 48 hours, inoculated with a Rhone yeast, fermented at temperatures between 18-30 celcius for 7 days, pumped over twice a day, tank closed off for 12 days, pressed, and racked back into tank for full malolactic before being transferred to barrel.
Tasting Note: Beautifully fragrant nose of loganberries, dark forest fruits and a hint of spice supported by vanilla oak ovetones. On the palate the structure is still very tight but with a wonderful mouthfeel of intense fruit displaying characters of dark plum laced with soft tannins.
