De Toren Fusion V 2017
PRODUCER: De Toren is a small boutique South African winery that has propelled itself into the front ranks of South African wine producer in an absurdly short period of time. Proprietors Emil and Sonette den Dulk, escapees from the Johannesburg business world, "stumbled upon this little piece of heaven" on the Polkadraai Hills overlooking False Bay, in 1991. De Toren's vineyards comprise of a mere 22 hectares, uniquely positioned on the Polkadraai Hills, overlooking Stellenbosch. The elevation of the vineyards (100-200 metres) overlooking False Bay to the South, and Table Mountain to the West, allow the cooling effects of the South Eastern wind to form a micro-climate perfectly tailored for the production of world class red wine.
WINEMAKING: Born of vineyards that are high in gravel content and benefit from prolonged exposure to the afternoon sun – conditions, in other words, that favour the cultivation of Cabernet Sauvignon – it is this intensely hued, robust flavoured varietal that, at 50% to 60%, forms the backbone of the formidable final blend. Aged in a climatised barrel room (16 degrees Celsius at 80% humidity) for 12 months in 50% new and 50% second fill, 225L oak barrels. 90% French Oak with the Malbec receiving the benefit of American oak. For optimum enjoyment, decant at least one hour before consumption. It is recommended to serve this wine at optimal temperature (15 - 18 degrees Celcius).
TASTING NOTE: The iconic Fusion V is crafted from Bordeaux’s ‘Noble Five’ varietals, with its complex flavours of liquorice, black cherry, cedar and dark berries, it offers a stylish departure for oenophilic tastes. Soft as spun silk, with a lingering hint of sweet fruit on the back palate, this wine will only improve with age.
