Cultivare Xarel LO 2018
PRODUCER: Since 1865 the Domènech family has worked lands in Penedès with a passion for obtaining the best fruit of the vineyards. Francisco José Domènech (1839-1909) was the founder of the winemaking tradition in the family and the first to seek perfection of a well-done work.
Xarel LO 2017 It's made from Xarel-lo. This grape of compact clusters, fine skin and medium sprouting and ripening. The Xarel-lo grape is mainly recognised for its role in making Cava sparkling wines. It is one of the three varieties of the trinomial varietal of Catalan cava; xarel-lo, Macabeo and parellada, and is undoubtedly the most important of the three for its power, degree and acidity.
WINEMAKING: Maceration with the skins for 4 hours to extract the aromatic precursors. Very soft pressing. Static settling at 13ºC for 24 hours. The clean must has a part fermented in stainless steel tanks at a controlled temperature of 16ºC, a part in an egg-shaped cement tank at 14ºC and a part in new light toasted French oak barrels, where it has remained for 3 months.
TASTING NOTE: Aromas of peach, pineapple, floral notes and dry grass combined with subtle notes of wood. Cultivare Xarel LO 2017 is truly a wine for an adventurous drinker.
