PRODUCER: Five generations and 167 years later Yalumba, Australia's oldest family owned winery, has grown in size and stature, embodying all that has made the Australian wine success story the envy of winemakers the world over.
WINEMAKING: Select parcels of grapes (both Cabernet Sauvignon and Shiraz) were hand-picked and crushed to eight tons open top stainless steel fermenters. Fermentation and cap/skin management was controlled by the Yalumba designed cap plunger, irrigating the fermenting wine over the skins or draining all the wine away from the skins and then flooding back. These different options allow us to optimize each individual batch/ ferment to make a wine with excellent depth of color, richness, texture and complexity. Matured for 12 months in 12% new Hungarian, French and American oak hogsheads and barriques, with the balance in one to five year old French, American & Hungarian barrels.
TASTING NOTES: Initial Shiraz aromas include ripe plum and cherry, followed by the leafy, cedary spice and red currant aromas of Cabernet Sauvignon. The palate is rich and very generous, yet soft and supple. Balanced flavours linger throughout the long finish.
