PRODUCER: Nautilus is a small, family-owned winery based in the stunningly beautiful Marlborough region of New Zealand. We began making Nautilus wines in 1985 and aim to craft delicious, food-friendly wines from the clean, cool and diverse valleys of Marlborough.
WINEMAKING: Hand-picked fruit from our Renwick vineyard was chilled overnight before being whole bunch pressed. The juice was settled overnight before racking, including some solids, to a 8-year-old, 3000 L French Oak Cuve and a 1800 L French Oak Foudre. The still cloudy juice was inoculated with a non-saccharomyces yeast (Torulaspora delbrückii) and allowed to ferment between 16 & 18 degrees. After a 40 day fermentation, the wine was matured on yeast lees for nine months before clarification & bottling in May 2021.
TASTING NOTES: Cerebral, small-batch wines that challenge the status quo. The 2020 Nautilus Sauvignon Blanc displays intense lifted aromas of white peach, preserved lemons and hints of elderflower. The palate introduces delightful citrus based mouth-watering intensity and finishes with a strong textural component.
